Food safety laws vary by state and territory across Australia, but the national Standard 3.2.2A sets the baseline: since 8 December 2023, food businesses handling unpackaged, potentially hazardous, ready-to-eat food must appoint a certified Food Safety Supervisor who is reasonably available. That covers cafés, restaurants, takeaways, bakeries, caterers, pubs and many food retailers in every state and territory. The label each regulator uses differs — Queensland, Western Australia, South Australia and the Northern Territory talk about “category 1 and category 2” businesses, Victoria uses “class 1, 2 and 3A” premises, and the ACT simply requires every registered food business to nominate someone — but the practical test is the same. The Food Safety Supervisor must hold a nationally recognised qualification — specifically SITXFSA005 and SITXFSA006 — issued by a Registered Training Organisation. Non-compliance can mean fines and enforcement action at inspection.

Every state and territory accepts the same two nationally recognised units, SITXFSA005 and SITXFSA006 — what changes is how often you have to retrain and which local extras apply.

NSW	5 years	You also need the separate NSW Food Safety Supervisor certificate (NSW Food Authority), valid 5 years — recertify within 90 days of expiry and keep a copy on the premises.
VIC	No set period	The Victorian Department of Health sets no renewal period. All class 1, most class 2 and class 3A premises must still appoint a supervisor.
QLD	5 years	Every licensed food business needs one. Category 1 businesses (Queensland Government) must also substantiate their critical food safety controls.
WA	5 years	The WA Department of Health requires category 1 and 2 businesses to hold training completed within the last five years.
SA	5 years	SA Health accepts SITXFSA005 & SITXFSA006; retail-only businesses may instead use SIRRFSA001, and some health settings use HLTSS00061.
TAS	5 years	If a certificate expires or the supervisor leaves, the Tasmanian Department of Health allows 30 days to retrain or appoint a replacement.
ACT	5 years	The broadest rule in the country — the ACT Government requires all registered food businesses to nominate a supervisor, generally within 30 days of registering.
NT	None published	Category 1 food-service businesses must have one, but the NT Government publishes no set renewal period — many employers refresh every few years anyway.

The units themselves carry no printed expiry date, which is what trips businesses up: six of the eight jurisdictions require your training to have been completed within the last five years, so the clock runs from your completion date and in practice you redo the course every five years. Victoria is the main exception, and the Northern Territory publishes nothing. Does my Food Safety Supervisor certificate work in another state?

Yes. SITXFSA005 and SITXFSA006 are nationally recognised units, so a Statement of Attainment issued by any Registered Training Organisation is accepted across Australia. The one addition is New South Wales, which requires its own NSW Food Safety Supervisor certificate on top of the national units.

How many Food Safety Supervisors does a business need?

NSW requires at least one certified supervisor per premises. Elsewhere the test is that a certified supervisor must be reasonably available to the business, which for multi-site operators generally means training someone at each location. Your local council can confirm what applies to your setup.

How do I know if my training has expired?
