The Food Safety Supervisor qualification for hospitality and retail is made up of two nationally recognised units: SITXFSA005 Use hygienic practices for food safety (often called Level 1, covering personal hygiene and preventing contamination) and SITXFSA006 Participate in safe food handling practices (Level 2, covering following a food safety program, temperature control, controlling hazards, and cleaning and sanitising). On top of the national units, NSW requires a separate NSW Food Safety Supervisor certificate — the national units plus NSW-specific content — issued by an RTO approved to deliver the NSW program. This NSW certificate is valid for five years and must be recertified.
