Who must appoint an FSS in WA

Since 8 December 2023, Food Safety Standard 3.2.2A — applied in WA under s.22 of the Food Act 2008 and the Department of Health's Regulatory Guideline No. 7 — requires category 1 and category 2 food businesses in WA, including Perth, to appoint a Food Safety Supervisor who holds a certificate from a Registered Training Organisation, completed within the last five years. Category 1 (higher-risk) businesses must also keep evidence substantiating their key food safety controls.

Food handlers vs the supervisor

The Food Safety Supervisor requirement sits alongside a separate duty: all food handlers must have food safety skills and knowledge appropriate to their work. The Food Safety Supervisor is the trained, certificated person responsible for overseeing safe food handling day to day.
