How Long Does the Food Safety Supervisor Course Take?

Most people finish the online Food Safety Supervisor course in around 6-8 hours of study, and many complete it in a single day. With Melbourne Tech Institute (RTO #45799) the course is $129, 100% online and self-paced, and your certificate is issued within 1 business day of finishing - so if you start this morning, you can realistically be certified by tomorrow.
The short answer
The Food Safety Supervisor course covers two nationally recognised units - SITXFSA005 and SITXFSA006 - and there is no mandated minimum seat time. How long it takes comes down to how quickly you work through the material and the assessments. In practice:
- Experienced hospitality workers (chefs, café owners, venue managers) commonly finish at the shorter end, around 6 hours - the content matches what you already do every day.
- People new to food safety typically take 8-10 hours, often spread over a few evenings.
- Because the course is fully online and self-paced, you can pause anytime and pick up exactly where you left off - between shifts, after close, whenever suits.
Timeline from enrolment to certificate
Here's what the full journey looks like with MTI:
| Step | How long it takes |
|---|---|
| Enrol online ($129, instant access) | About 2 minutes |
| Complete the online course (SITXFSA005 & SITXFSA006) | 6-8 hours for most people, self-paced |
| Assessments (built into the course) | Included in the study time - no exam day |
| Your observer returns their report | Depends on your observer - the one step not in your hands |
| Certificate issued (marked by a person) | Within 1 business day of the last piece landing |
| Express marking (optional, +$19.95) | Certificate within 6 business hours instead |
| NSW Food Authority certificate (NSW venues, +$35) | Issued after your national certificate |
So the realistic end-to-end answer: enrol today, study today or over a couple of evenings, and hold your nationally recognised certificate within 1 business day of the last piece landing - your assessment and your observer's report. If you're under inspection pressure, the optional Express add-on (+$19.95) moves you to the front of the marking queue and issues your certificate within 6 business hours of that same point.
Can I really do it in one day?
Yes - one focused day is enough for most people with any kitchen or food-retail experience. The units are practical rather than academic: safe food handling, temperature control, cleaning and sanitising, allergen awareness, and the supervisor-level responsibilities under Food Safety Standard 3.2.2A. There's no classroom booking, no scheduled exam and no waiting for a course start date - the course starts the moment you enrol.
What can slow you down (and how to avoid it)
- Waiting on your observer. Part of the assessment is a practical observation completed by someone who has seen you work - usually your supervisor or manager. You nominate them and we email them their own short form. It's the one step that isn't fully in your hands, so nominate them early rather than at the end.
- Choosing a provider with scheduled webinars or classroom sessions - you'll wait days or weeks for a seat. A fully online, self-paced course removes the waiting entirely.
- Doing the wrong course - a basic food handler certificate is NOT the Food Safety Supervisor qualification. If your council or auditor asked for an FSS, you need SITXFSA005 & SITXFSA006, not a handler course. (Unsure? See Food Safety Supervisor vs food handler.)
- Leaving it until the inspector is due - certificates are issued within 1 business day of completion, but starting the course the night before an inspection is cutting it fine. Enrol as soon as you know you need one.
How long before it expires?
Once issued, your certificate is generally recognised for 5 years in most states (NSW requires recertification every 5 years through an approved provider; some states treat it as ongoing but auditors expect refreshers). In NSW, if your certificate is still current, or expired less than 90 days ago, you can renew with the shorter NSW recertification course at $119 all-in rather than sitting the full course again - it's only once you're more than 90 days past expiry that shortcut closes. Full state-by-state details are in our guide: how long does the Food Safety Supervisor certificate last?
How many hours is the Food Safety Supervisor course?
Most people complete the online course in 6-8 hours of self-paced study. There's no mandated seat time - experienced hospitality staff often finish in around 6 hours, while newcomers may take up to 10.
Can I finish the Food Safety Supervisor course in one day?
Yes - one focused day is enough for the study for most people. Your certificate then follows within 1 business day, once your assessment and your observer's report are both in.
How quickly do I get my certificate after finishing?
Melbourne Tech Institute emails your nationally recognised certificate within 1 business day of the last piece landing - your assessment and your observer's report. The optional Express add-on (+$19.95) moves you to the front of the marking queue and issues it within 6 business hours of that same point.
Is there an exam or classroom session?
No exam day and no classroom. Assessments are built into the online course and completed as you go, from any device.
Does the course cost extra if I take longer?
No - the course is a flat $129 (was $200) with self-paced access, so you can spread your study over several days or weeks at no extra cost.
Do I need someone to observe me?
Yes. Alongside the online assessment, a practical observation is completed by someone who has seen you handle food at work - usually your supervisor or manager. You nominate them at enrolment and we email them their own short form to fill in, so they don't need an account or a login.
